Stage 2. Cook the Rhubarb

  • 4 dessert pears. These should be roughly of equal size. Select a round-shaped pear, such as Rocha, Williams or Comice. Try to find pears that have a good stem
  • 500 ml

Method

Take a medium/large saucepan big enough for the pears to stand in.

Pour the water into the pan, add the lemon peel and root ginger.

Dissolve the sugar in the water over a medium heat.
