For the Fruit Purée

  • 500 g green garden gooseberries
  • 1 heaped tbsp caster sugar

Method

To Make the Fruit Purée

Place the ingredients in a saucepan with a well-fitting lid and cook until soft and pulpy, slowly over a low heat.

Liquidise and pass the purée through a fine sieve.

Cool completely.

You can avoid having to top and tail the gooseberries if you are planning to make a purée in this way.
