Find a well-tended kitchen garden growing lots of good things. Pick an interesting variety of salad leaves such as: Landcress, Greekcress and Mustard leaves, Rocket, Mizuna and Minas Lettuce. Add all sizes and shapes and colours of Sorrel, Kale and Beetroot leaves. Peashoots are great too. Add a few wild ingredients from round about, such as young Ground Elder, Chickweed and Wild Garlic. Select this carefully and wash it well. <
