In the late 1800s, absinthe started showing up in many drinks, including in old ones billed as improved versions. The spirit’s long list of botanicals usually includes anise, which gives it a sensation of sweetness that helps round out cocktails without the addition of sugar.
Combine the Cognac, bitters, maraschino liqueur, gum syrup, and absinthe in a mixing glass filled with ice and stir until well chilled, 20–30 seconds. Strain into a chilled cocktail glass or coupe. Express the lemon zest over the drink and drop it into the glass.
