The beautiful quince tree bears fruit of several forms. They may be the size and color of a pear, or shaped more like an apple. The skin may be wooly or smooth. In any case, the quince’s only constant factor is its penetrating perfume, musky and wild, which helps make a rather spicy liqueur here that if bottled and kept in a dark place, will keep for over a year!
