You can serve this sweet, spicy, crunchy salad as a starter, lunch or accompaniment to a main course. You could also serve with some quinoa or couscous for a more filling dish. I like to use a selection of different-coloured carrots as they look great – many green grocers and supermarkets are now stocking them in season, so do look out for them.
