If your gathering is small, a roasted chicken—even two—can be a nice alternative to a large turkey. Here, the bird is simply flavored with butter and fresh rosemary to let its natural flavor shine through.

Ingredients

  • Whole chicken, 1, about 4 pounds
  • Unsalted butter, 2 tablespoons

Method

About 30 minutes before roasting, remove the chicken from the refrigerator. Pull out and discard the yellow pads of fat from both sides of the body cavity.
