This stew is among the spicier dishes in this book and a bit more time-consuming to make, but it’s totally worth the extra investment, especially if you’re going all out for a special occasion. The slow-cooked onions and spices create an especially flavorful sauce that is punctuated with chunks of buttery-soft eggplant. The longer this simmers, the better the flavors come together. If you have time, cover it and keep it simmering gently over very low heat while you prepare other dishes.
