I love finding new ways to enjoy classic comfort foods. I created this dish as a reimagined breakfast sandwich. The rolls for this recipe should be unsliced, so not hamburger style. The right roll may be easier to find in the deli section of your supermarket than in the bread aisle.

Ingredients

  • 4 large soft rolls, such as brioche or bolillos
  • 1 cup baby spinach leaves

Method

Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper or a silicone mat.

Slice off the top of the rolls, then scoop out the centers to create a bowl with a ½-inch-thick bottom and sides. (You can reserve the excess bread to make bread crumbs.)
