Brought by Samichlaus (the Swiss St Nick) on the 6th of December, this version of gingerbread is seen all over Switzerland during the holiday season.

Fragrant with spices and sometimes stuffed with marzipan, these cookies and breads can be elaborate and ornate, easily serving as decoration, or be unfussy and simply delicious to eat.

My version contains more butter than most, and is meant for cut-out cookies. To keep it soft in the middle, be sure not to overbake, taking them
