This is thought to be one of the earliest cakes in the world, revered for centuries as a symbol of immortality. Honey is one of Nature’s best preservatives and was stored in jars deep in the pyramids alongside the mummified bodies of the pharaohs. The Greeks offered honey cakes to the gods and, in ancient times, Roman soldiers carried small versions into battle in case they needed something for the afterlife.

Originally made with honey and mashed-up beans (and later with barley or a
