Black sesame seeds, which are richer in flavor and more fragrant than the white variety, make a wonderful dressing. In early summer, I dress fava beans and green peas this way. The bright green vegetables will have an interesting smudged appearance— and they taste so good. Cooked spinach, asparagus, broccoli, broiled and peeled eggplant, fresh green edamame soybeans, or string beans are all good done this way.
