This Middle Eastern salad is best made the day before it is to be served, which is handy when you’re cooking for lots of friends. Bulgar wheat is cracked wheat; you could use couscous instead, which, like bulgar, only needs soaking before use. To adjust the quantities, halve or multiply the ingredients, as necessary, but rely on taste to determine the correct balance of oil, lemon juice and seasoning.
