As it turns out, red lentils get along very well with pumpkin. They fit right into a moist, mildly spiced loaf-sort-of-cake, studded with chocolate chips, which fueled us through many a long hour of editing this book. Thanks, red lentil pumpkin cake. (p.s.: this loaf freezes well, too, so you can have one now, and one stashed away in case of a cake emergency.)
