Crème Chantilly is essentially just whipped cream that has been sweetened with sugar, but it can also have a little alcohol or vanilla added to it. It can be used for many things – it is a great filler for cakes, delicious served with meringues and can transform fruit and pancakes into an indulgent and luxurious brunch.

Ingredients

  • 300 ml (10 fl oz/ cups) double (heavy) cream

Method

Place the cream in a large mixing bowl and sieve in the sugar. Whisk as you would with the vanilla cream (see above), making sure the cream isn’t over worked. When starting to thicken, add a good splash of the eau de vie and continue to whisk until soft peaks form.
