Ingredients: 75 g currants; 300 g chilled butter; 3 g fine sea salt; 225 g plain flour; 1 egg, beaten; 75 g soft light brown sugar; 75 g butter; zest of an orange; 5 g ground cinnamon; iced water; 3 g grated nutmeg; 50 g chopped mixed peel; sprinkling of caster sugar; 75 g golden raisins

I don’t want to offend anyone from eccles in daring to propose a recipe, I’m not a northerner. These are predominantly currants, as they should be, but they are not strictly authentic. We like them

Ingredients

Filling

75 g butter
75 g soft light brown sugar
zest of

Cake
Vegetarian

Method

To make the filling

Melt the butter and sugar together and carry on cooking gently until it turns a deep golden colour. Add the orange zest, cinnamon and nutmeg. Cook for a couple of minutes then add the fruit and mixed peel.

Stir everything together and keep cooking until you have a thick sticky mix. Remove from the pan and leave to cool.
