This is a very versatile recipe that I learnt from my sister’s family – a salad that makes a wonderfully nutritious side dish, or a healthy mid-morning or mid-afternoon snack. Mung beans are great for protein, then there’s the crunch of colourful vegetables and a dash of cumin, chilli and lime… a simple yet hearty and tasty salad bowl you can enjoy daily!
