My understanding of the Yakhni Palau comes from meals we shared at tables with friends and neighbours. It was rice that looked very plain but was always full of flavour. It had either chicken or lamb in it. The yakhni was the broth in which the rice was cooked. The result was a flavorful palau.
Legend has it that it was the creation of the Persian Empire but served across the Persian Plateau. It was favoured by the Mughals in India and is now considered the masterpiece
