Eating locally reared free-range beef is always the best option, and a good-quality sirloin steak is great for sharing.

Ingredients

  • 50 g (2 oz./¼ cup) unsalted butter
  • 1

Method

For the chilli butter, mix the soft butter with the chilli powder and sauce, then place on a piece of cling film (plastic wrap) and mould to a 1 x 1cm (½ x ½in.) square. Place in the freezer for at least 1 hour.

Start the robata grill. Season the steak with salt and pepper, then grill on each side for 2 minutes, turning twice until medium-rare.
