Heritage carrot salad

This minty and aromatic salad is my take on a more traditional carrot salad. It came into existence when I set my eyes on heritage carrots, particularly the purple ones available in the UK. To make it even more visually appealing, I occasionally add cucumbers or baby courgettes if they are available at the market. Serve this salad ever so slightly warm as a bright accompaniment to your barbecues and roasts.
