There is something about these delicious fritters – it is totally impossible to stop eating them until they are all gone! I love to serve them with tzatziki or tahini.

Ingredients

  • 4 medium courgettes

Method

  • Slice the courgettes into long strips, batons or diagonal slices.
  • In a large bowl, whisk the batter ingredients together to make a smooth batter. Add a drop more water if it looks too thick. Season with a little salt and pepper.
