Quince Gin Fizz

• 2 oz [60 ml] gin
• ¾ oz [22

Pour the gin, lemon juice, syrup, and egg white into a cocktail shaker and fill with ice.

Shaky, shaky for 30 seconds and then pour over ice and top with the soda water.
