Oeufs à la neige, the French dessert of poached meringue in custard, is a real thing. Poached quince is a thing. Coing is French for quince. So, logic goes that meringue poached along with quince would be a thing. It just didn’t have a name yet, so I made one up. Note: You can make this with dry white wine too. Just increase the honey to ½ cup [170 g].
