Save your well-aged, high-quality Brie for another time. I like this recipe best with the most average grocery store Brie-style cheese because I can’t taste the glory of a perfectly ripened cheese when it is melted in the oven and slathered in roasted cherry juice. And if I can’t appreciate the nuance of the finest ingredient, there’s no point in spending the money on it.
