  • 5 cups grated coconut meat (after milk has been extracted)
  • cups sugar

Method

  1. Mix grated coconut meat and sugar. Place in a kettle and cook rapidly for 5 minutes, stirring constantly.
  2. Turn heat to moderate and cook about 10 minutes, or until grated coconut meat turns golden brown and crispy.
