  • 2 pounds white sweet potatoes
  • quarts (6 cups) water

Method

  1. Scrub, cut into pieces, and wash sweet potatoes. Boil in water and salt included in A, over moderate heat, covered, about 40 minutes, or until fork-tender. Drain, peel, and immediately put through a ricer.
