Method

Blanch the string beans in boiling salted water for 4 minutes, then drain and rinse in cold water. Mix the beans, tomatoes, celery, bell peppers, onion, lima beans, cauliflower, cassia, fennel seed, and coriander seed in a large nonreactive kettle.

In another nonreactive kettle, combine the vinegar, salt, and sugar. Bring to a hard boil over high heat and continue to boil 3 minutes, the
