Method

Almond Pain de Gene

Cream the butter and the caster sugar in a mixing machine, with the paddle attachment. Add 80g of the whole eggs and mix well. Add the remaining dry ingredients and mix again. Finally add the remaining 120g whole eggs and mix to a smooth paste. Spread into a silicone sheet and bake at 165°C for 12 minutes. Once cold, cut the sheet into t
