Ingredients: Juice of ½ a lemon; 1 tbsp plain yogurt; ½ tsp ground black pepper; ½ tsp garam masala; 2 tbsp neutral oil; ½ tsp salt; 1 tsp butter; 1 tsp ginger and garlic paste; 400 g/14 oz can of chopped tomatoes, or 4 tomatoes, puréed; 2 white onions, chopped; 1 tsp tomato purée/paste; 1–2 green chillies, chopped (optional); Salt, to taste; 200 ml/7fl oz/scant 1 cup whole milk; 1 tsp ground coriander; 1 tsp Kashmiri red chilli powder (optional); 1 tsp dried fenugreek leaves; ½ tsp chaat masala; 100 ml/3½fl oz/scant ½ cup warm water; ½ tsp sugar; 1 tbsp ginger and garlic paste; 1 tsp ground cumin; ½ tsp garam masala, to garnish; 5–6 green cardamom pods; 8–12 tbsp neutral oil; 500 g/1 lb 2 oz chicken on the bone: skinless drumsticks, with tendons, and thigh pieces, cut into medium pieces; 7–8 black peppercorns; 3–4 cloves; 1 mace blade; 2.5 cm/1 in cinnamon stick
