Ingredients: Salt, to taste; 3 tbsp neutral oil; 500 g/1 lb 2 oz skinless chicken breasts, cut into bite-size pieces; 1 bay leaf 1 tsp cumin seeds; 1 tsp Kashmiri red chilli powder; 1 tsp mango pickle, without the mango pieces (see note); ¼ tsp asafoetida; ½ tsp onion seeds (nigella seeds); A few fresh coriander/cilantro leaves, chopped, to garnish; 2 tomatoes, chopped; 1 tsp dried mango powder; ½ tsp cumin seeds; ¼ tsp fenugreek seeds; 1 tsp mango pickle, without the mango pieces, or chilli pickle, without the chillies (optional) (see note); 5–6 garlic cloves, 2.5cm/1 in piece of root ginger and 1 green chilli, pounded coarsely; 2 white onions, finely chopped; A pinch of asafoetida; 1 tsp fennel seeds; 1 tsp white wine vinegar; 1 cm/½in piece of root ginger, julienned, to garnish; 1 tsp chaat masala; 200 ml/7fl oz/scant 1 cup warm water; 1–2 green chillies, halved; ½ tsp salt; 2 dried Kashmiri red chillies; ½ tsp black peppercorns; ½ tsp mustard seeds; 1 tbsp plain yogurt; ½ tsp ground turmeric; 1 tsp ground coriander
