This recipe comes from Debbie Shaw, who contributed all the gluten-free recipes in the ‘Gluten-Free Bread’ chapter. Organic spelt is a highly nutritious grain with a low gluten content. Barley malt extract provides a natural sweetness and gives the bagels their traditional malty taste. Barley has a high mineral content, helps lower cholesterol and is soothing on the digestive tract and stomach.
