Nowadays the buttermilk sold in Irish shops is usually low-fat. If you have access to beautiful rich, thick buttermilk, there is no need to add butter or extra cream. If a lighter bread is preferred, the proportion of white to brown flour can be adjusted to taste – we use 300g plain flour and 150g brown wholemeal flour. An egg adds to the flavour and richness.
