Kohlrabi is one of my favorite vegetables that I discovered upon moving to France. Beautiful purple and light green bulbs of choux-rave invade Paris markets in the autumn and stick around all season and into the colder months. Inspired by my love of raw fennel, I came up with this salad that celebrates the flavor of uncooked kohlrabi, fresh fennel, and crisp autumn apples.
