This cake, with its hints of vanilla and cinnamon, is everything I love about Mexican chocolate. It is rich and flavorful, has a moist texture, and is guaranteed to impress. The whiskey ganache provides a glossy, not overly sweet finish that takes this cake over the top.
To make the cake, put the Mexican chocolate into a microwave-safe bowl and microwave on medium power until softened, 30–40 seconds. Transfer the chocolate to a heavy, small saucepan, add the oil and cocoa powder, and heat over medium heat, stirring occasionally, just until all the ingredients are evenly blended. Remove from the heat, add the Guinness, stir to mix, and set aside to cool slightly
