Method

The riper the bananas the sweeter the taste, so don’t go throwing out bananas that don’t look their best – they’re perfect for this recipe. Once made, you should eat the muffins within a day or two as they can go a little dry because there is no added sugar and very little fat in the recipe. You can get an extra day out of them by warming them through in the oven or microwave, or serving them w
