Ingredients

  • Avocado oil or coconut oil spray
  • 2 large eggplants, peeled and sliced into long thin spears
  • 3 large garlic cloves, minced

Method

  1. Start by peeling 2 large eggplants and slicing them into ¼-inch thick sticks (about 0.6cm thick).
  2. Over medium heat, spray oil, then add eggplant sticks. Cook for 5 to 7 minutes or until soft and flexible; eggplants sticks should be similar in consistency to a cooked, thick udon noodle.
