This satisfying soup makes the most of winter produce, while its Mediterranean flavours are a reminder of warmer days. It’s high in fibre, vitamins A and C for liver health, and a great way to help children get their five-a-day. Savoy cabbage is particularly high in potentially cancer-fighting compounds. Both the soup and croutons can be made several days ahead and freeze well.
