Ingredients: eight 1 cm (½ in) slices brioche or good-quality white bread, any shape but square does work well; 100 g (3½ oz) caster (superfine) sugar; 1 tablespoon liquid glucose; 125 ml (4 fl oz/½ cup) thickened (whipping) cream; 110 g (4 oz) dark chocolate, roughly chopped; 60 g (2 oz) peanut butter, smooth or crunchy; 150 ml (5 fl oz) thickened (whipping) cream; 25 g (1 oz) unsalted butter, at room temperature; smoked salt flakes to sprinkle; unsalted butter, softened; 1 banana, cut into 5 mm (¼ in) slices; icing (confectioners’) sugar for dusting
