Trofie al Pesto

The photograph which you can see on the cover of this book was taken on a day when the weather was perfect for capturing the Italian countryside. The combination of the beautiful day, the scenery and eating this delicious dish was a great pleasure for the eye, the palate and the soul.

Trofie is a particular pasta shape from Liguria. It is usually home-made but you can find it in good Italian shops. Alternatively you can use strozzapreti or fusilli instead.
