Rollmops are a favourite of mine. You can buy some great cured fish nowadays, but if like me you have been put off by unappetizing examples in the past, try making your own. They make a top Saturday lunch and the perfect accompaniment to an al fresco salad. You must use great fish, fresh and from a trusted source, and I find that herrings are at their best in autumn and early summer.
