This is one of the biggest selling products in my Sweet Studio in Melbourne. It is popular all year round even though the freeze-dried red strawberries and green mint make it look especially Christmassy.

Ingredients

  • canola oil spray
  • ½ teaspoon mint oil
  • 400 g (14 oz

Method

  1. Lightly spray a 3 cm (1¼ in) deep, 35 cm x 25 cm (14 in x 10 in) baking tray with oil spray and line the base with a piece of baking paper.
  2. Mix the mint oil into the tempered chocolate and pour most of the chocolate into the tray to cover the base. Randomly stud the chocolate with the strawberry slices and mint leaves, if using. Gently tap the tray on the table
