Thai toasted-rice powder (khao khua) is made by very slowly toasting sticky rice grains to a golden brown and then grinding them to a coarse powder. It adds texture and a nutty flavor to dishes. Sticky rice is also sold as “sweet” and “glutinous” rice.

Ingredients

  • ¾ cup (150 g) Thai sticky rice

Method

Put the rice in a large stainless-steel skillet and cook over medium heat, stirring regularly and shaking the pan to keep the rice in an even layer, until it is golden brown, 10 to 12 minutes. If the rice begins to burn, lower the heat.

Spread the rice on a baking sheet and let cool to room temperature. Using a spice grinder, grind to a coarse powder like coarse ground coffee. Store in
