  • cup (75 ml) fresh lime juice
  • 3 tablespoons fish sauce

Method

In a small nonreactive bowl, combine the lime juice, fish sauce, chile, garlic, vinegar, and sugar and stir until the sugar is dissolved. Let sit for at least 30 minutes before serving for the flavors to develop. Serve at once or cover and refrigerate for up to 3 days. Stir in the cilantro just before serving.
