As Americans adopted pizza as their own, with myriad permutations compared to the original from Italy, so, too, have Spaniards adopted the croqueta. These crispy then creamy morsels are a French innovation created to use up leftover bits of meats, cheese, and vegetables, but they’ve taken on a life of their own on the tapas table. Indeed, croquetas may well be the most universal tapa in Spain, and those adorned with jamón, the pepperoni pizza of them all.
