As Americans adopted pizza as their own, with myriad permutations compared to the original from Italy, so, too, have Spaniards adopted the croqueta. These crispy then creamy morsels are a French innovation created to use up leftover bits of meats, cheese, and vegetables, but they’ve taken on a life of their own on the tapas table.
