The crumble is universally recognised and loved. You only have to put it on a menu and patients instantly know what it is. Rhubarb is seasonal and full of good nutrition, but it can be replaced with many different fruit from different times of the year. The topping is sweet and crunchy and full of energy. This is a dish that travels well too.
Fresh rhubarb crumble is a classic and a crowd pleaser. Serve with custard, or for a more indulgent dish, with lightly whipped double cream.</
