Beef is extremely popular on hospital menus and always has been. One of the challenges is reducing it to lower carbon footprint. This great French stew made with beef, baby onions, bacon and cooked in red wine is a way of enjoying less beef with more added ingredients, or even replacing it with venison.
A warming one-pot classic, slow cooked to perfection. Serve with creamy mashed potatoes.
