Mochi Muffins with Pineapple and Coconut

Mochi is one of those treats that we love. That gooey glutinous rice gives baked goods a texture that you just can’t resist. These muffins are just as fun to look at as they are to eat, and I love getting to take Japanese mochi and give it that E-40 twist. Make a batch of these to go with your morning coffee, or better yet, make them part of one of my favorite Cali pastimes: wake and bake.
