We used to spend our holidays at my grandparents’ timeshare in Portugal, and everywhere you went they served the classic Portuguese piri piri chicken. So here’s a simple dish to remind you of sun-drenched holidays.
Put all the marinade ingredients into a blender and blitz to a purée. Put the chicken breasts into a non-metallic bowl, cover with the marinade and rub it into the meat. Cover with cling film (plastic wrap) and marinate in the fridge for 1 hour.
