A light and healthy alternative to a traditional burger. I love the kick you get from horseradish sauce so quite often add more than a tablespoon to the salmon mix.
Ingredients
4spring onions, roughly chopped
25gflat leaf parsley, roughly chopped (including the stalks)
Blitz the spring onions and flat leaf parsley in your food processor until finely chopped.
Add the salmon and pulse until it is finely chopped but still has a bit of texture. Scrape everything out into a bowl and mix in the breadcrumbs, horseradish and egg (I usually use my hands to make sure everything is thoroughly incorporated). Season well with salt and fre
