A super fresh tomato and chilli salsa that perks up almost anything. It’s Rosie’s favourite, and we always make it to go alongside our Venison and Cranberry Burgers or Mediterranean Eggs.

Ingredients

  • 15 cherry tomatoes
  • ½ red onion, finely chopped
  • 1 red chilli, finely chopped

Method

  1. Put the cherry tomatoes into a food processor with the red onion, chilli, garlic and lime juice. Pulse briefly until you have a salsa with quite a bit of texture.
  2. Add the coriander and pulse a couple of times to combine.
  3. Pour the salsa into a bowl and serve.
